Sheet Pan dinners have been the rage for years, but most recently they have been much more used and liked. I do not have the Tick-Tock, or whatever it is, but I do have Pinterest and have quite often seen recipes and “hacks” for meals on social media. Sometimes when I am short on time or just wanting an easier dinner, I will literally do a Sheet Pan dinner.

Is Budget a bad word?
When we plan our weekly meals, we always leave room for alterations and changes. It is never a 100% strict plan. Take these chicken drumsticks for example, we were going to have a different meal and when I saw the price of the chicken, the original meal was thrown out. I want you to know that even with a strict budget, you can still have the flexibility while at the grocery store for changes. Especially if it saves the budget over ten dollars on one meal in the cost of meat.
I created my Grocery List and Menu Planner sheets many years ago. In making them, my main goal was to have a source of accountability with my poor shopping habits at the grocery store. After completing Financial Peace University from Dave Ramsey, setting a budget, and trying to get our finances in order in 2018, we really wanted to budget our food spending. Consequently, after looking at what was spent on food for a few months, we realized that by not budgeting food, we left this open to financially ruining us each month. Setting a grocery budget, removing anything but food from that list, and meal planning has helped us so much to take control back for the budget.
How we gained financial freedom
Each week we budget $170 for food for our family of six. Toiletries are not a part of this budget. That gets a separate allowed budget monthly. Our toiletries budget includes anything that you use in the bathroom, pullups, paper towel, cleaning products and dish cleaning solutions.

Monthly Budget Maintenance
Each month Tyler and I try to get together for a Budget Commitee Meeting. This is where we revisit our finances and check to make sure we are staying on track. It is more so a way we both can have accountability and to make any changes if needed. Just this past summer we had to revisit our food budget and make changes. With the rising cost of food, we increased our weekly food budget from $150 to $170 dollars.
For our family, budget is NOT a bad word. I feel like society today has given it a stigma that having a budget is a negative way to live. When in fact, having a budget can be the most freeing way to handle your finances. Personally, I am the spender and the one who does not like to budget. The last four years has taught me to handle money in a healthy way.

When I went to the grocery store this last week, there was an amazing deal on drumsticks. I got the entire pack, fourteen drumsticks, for $2 off! How cool is that!? With the small cost of carrots, broccoli and potatoes, this meal was completely reasonable and thus in our budget.

The total cost for this recipe was only $9.11 and brings the cost per serving down to $1.13.
The amount of food for this meal stretched onto two sheet pans. It was incredible to see the large amount of food for this cost! Likewise, I love getting meals for our family of six for under $20 a day.
One reason this recipe did not cost much was that we had this seasoning blend on hand already. I believe it was a gift and we have had it for a while before using it. Having seasoning blends on hand help to lower costs, but I do recommend making your own seasoning blends if you have the opportunity to do so. Dry herbs in bulk cost much less than buying them in smaller amounts.
Sheet Pan Oregano, Basil and Tomato Chicken Drumsticks Recipe
Chicken Sheet Pan Ingredients
14 Drumsticks
5-6 Potatoes
4 Carrots
1 Broccoli crown
Oil
Non-stick spray
Oregano, Tomato & Basil Seasoning blend
Sheet Pan
Sheet Pan Directions
1. Preheat oven to 375 degrees and spray a Sheet Pan with non-stick spray and then set aside.
2. In a sink colander, wash your carrots, broccoli and potatoes. One item in my kitchen that is legit used every day has to be this over the sink colander. It keeps food off of the sink basin and can extend to fit most sink sizes. Plus, it is dishwasher safe!
3. Place chicken in a bowl and then drizzle with oil and season with desired seasoning. The main reason to season the chicken in a large bowl is so that the seasoning can coat all sides. You can then use the same bowl to season the vegetables with The Gourmet Collection Spice Blends Oregano Basil & Tomato!
4. Arrange chicken drumsticks on the Sheet Pan. I laid the drumsticks with the thickest points towards each other, not for any particular reason. Possibly because it looked the best, or that I thought the juices, while running out during cooking, would help to aid in the steaming and cooking of the subsequent vegetables on the pan. As a result, the flavors from the chicken DID help to enhance the flavors of the carrots, broccoli and potatoes.
5. On a cutting board, cut the stems off of the broccoli, cut them into smaller pieces and arrange them on the pan. We love broccoli that has been roasted in the oven. It not only gets cooked to a soft texture, but broccoli also gets a delicious nutty flavor when cooked like this. Tyler and I have to literally fight with the kids over who gets the most broccoli.
6. Peel the carrots, cut the ends off and slice them into pieces. Lay them also on the Sheet Pan. Typically, I cut the carrots in half and then cut them lengthwise with the thicker tops cut quartered. Cutting the carrots lengthwise helps them to cook more evenly.
7. Peel potatoes and cut them into large wedges. Place the potato wedges in the large bowl and drizzle with oil before laying them on the sheet pan. Drizzling the potatoes with oil helps them to not only stay un-stuck from the Sheet Pan, but also helps aid in the browning of the potatoes.
8. Drizzle the vegetables with oil and then season with salt and pepper. If you want to season the vegetables with the same seasoning, here it is! From The Gourmet Collection Spice Blends Oregano Basil & Tomato. One thing I love about this spice blend is that it does not contain salt, so you have 100% control over the sodium in your meal. How cool is that?
9. Bake until the chicken reaches a temperature of 165 degrees. This can vary your cooking time so make sure you use a thermometer to temp the chickens. Two Sheet Pans of food took a little over an hour to cook, closer to 70 minutes.

Equipment
- Rimmed baking sheet
- Non-stick spray
Ingredients

- Carrots

- Oregano, Basil, Tomato Seasoning Mix
Instructions
- Preheat oven to 375 degrees and then spray a Sheet Pan with non-stick spray and set aside.

- Bake for 45 minutes or until the chicken reaches a temperature of 165 degrees.
- This can vary your cooking time so make sure you use a thermometer to temp the chickens.
