Breakfast Sandwiches for Dinner

Every once in a while, instead of spending an hour on prep and cooking, this momma goes easy, and we have breakfast for dinner. Last night, we had Breakfast Sandwiches for Dinner. By warming up sausage patties, cooking eggs in a very unconventional way and toasting bagels, dinner was fun and hands-on for the kids.

Bagels or Croissant, which is best?

Everything bagel thins turned out fantastic with this Breakfast Sandwiches for Dinner idea. However, the Croissant idea fell very short. Literally. When we tried to cut them to use them as a sandwich, they were just too small. Next time, we may shape the croissant differently, possibly into a square shape and not the typical shape.

How I cooked the eggs

Usually, we eat fried eggs. However, tonight I tried to cook the eggs all at once in the oven in a baking pan. By cooking the eggs in the oven, and not on the stove, eighteen eggs were cooked all together instead of in small batches.
One thing, to keep in mind if you do this with the eggs, is to poke or pop the yolks or they may explode in the oven. This is the same with potatoes in the oven, make sure you poke them before baking in the oven! No one likes a mess in their oven.

Our family loves to eat bagels. When I have time to make them, we typically have plain, cinnamon raisin, blueberry or everything flavored bagels to choose from. As we had just came back from a week at my parents on the lake, we were quite lacking in food and time to make homemade bagels. Breakfast Sandwiches for Dinner Recipe

Ingredients

18 eggs
Sausage patties
Sliced cheese
Bagels
Croissants
Non-stick spray

Directions for Breakfast Sandwiches for Dinner

1. Set the oven temp to 375 degrees Fahrenheit.
2. Spray a baking pan with non-stick spray and then crack the eggs into the prepared pan. Make sure to poke the yolks to prevent them from exploding in the oven.

3. When the oven is preheated, place the eggs in the oven to bake until firm. When done, remove the pan from the oven and let rest for 2-3 minutes before serving.

4. Open a tube of croissant rolls and form them on a baking stone, then bake as directed.

5. When the croissants are fully baked, remove them from the oven and let rest for 2-3 minutes before eating.

6. Warm a large skillet and heat the sausage patties until browned. When cooked, place them onto a plate and set aside.

7. Toast bread or bagels. At ALDI we found skinny bagels to use. Typically, I make my own bagels, but this week was super busy and as this is a “quick dinner”, pre-made will do!

Assemble the Breakfast Sandwiches for Dinner

8. Prep your Breakfast Sandwich! On the bagel or croissant, lay a sausage patty, cheese and egg.

Finally, serve your Breakfast Sandwiches for Dinner with your choice of fruit or yogurt and enjoy!
