Scratch Made Cinnamon Raisin Bread Recipe

Breakfast options are unlimited lately. From pancakes to eggs, sausages, cereal, granola bars, yogurt and more. Sometimes having a new thing that the kids will eat is a win, because let’s face it, kids eat a lot of food. When out grocery shopping this last week, our son Levi wanted Cinnamon Raisin Bread but this frugal from scratch momma was not going to pay the artisan bread prices. To be frank, I am cheap, so I just made my own. Problem solved.

Should have added more cinnamon

Do I have regrets? A fair few, but in this recipe, I do regret not adding more cinnamon. Like, 3-6 Tablespoons more cinnamon. For a first time, making Cinnamon Raisin Bread was a complete success. The kids loved it, the husband loved it, and it was super delicious. But collectively, we all felt this bread could use much more of a cinnamon flavor. So, for the next time just double the amount of cinnamon.

Garlic is the same way. Whenever I read a recipe that will be made, the number of garlic is typically doubled without question.

Price of flour

In 2020, the price for a 25-pound bag of flour was under ten dollars. This past week, when I bought a bag of flour, it was $18. In two years, the price of flour has doubled. This realization was painful not only for our budget, but also for the thoughts to the future. I don’t often get negative or political or anything, and if you know me you know that is HARD. I am really opinionated and firm in my beliefs. However, with the rising cost of food, the staggering increase in raw food materials, I do have to give a forewarning to anyone who will listen. Or from a farmers’ point of view, check out the link below. All I know, is that the cost of 1 cup of flour in 2020 was $0.11 from a $9.58 25-pound bag and now the same bag is $18.79 and costs $0.23 per cup. I am not the greatest at math, but pretty sure that is a 109% increase for flour alone in two years.

Quick Bread Recipe

I have been making bread for quite some time. Whole wheat, white, oatmeal, rye, 5-grain, 7-grain and more. But this recipe for a 1-hour quick bread recipe has got to be the most delicious and yet fluffy bread recipe. And the kicker?! You use maple syrup instead of sugar! How awesome is that?! Recipe for Cinnamon Raisin Bread

Ingredients

1 1/2 cups warm water
Yeast, 1 Tablespoon
1 Tablespoon maple syrup
3 1/2 cups flour
1 tsp salt
2 Tbsp cinnamon, divided
1 Tbsp brown sugar
2/3 cups raisins
1 tsp vanilla

Directions

1. In the bowl of a KitchenAid mixer, pour in warm water, 1 Tablespoon yeast and 1 Tablespoon maple syrup, then whisk well to combine, then let the mixture rest for 5 minutes.

2. When the yeast water is bubbly, add 1 Tablespoon cinnamon, 1 teaspoon vanilla, 3 1/2 cups flour and 1 teaspoon salt, then mix well until fully combined.

3. On a clean countertop, pour out the cinnamon raisin bread dough and then gently flatten it into a 12-inch by 12-inch square.

4. On the bread dough, add the 2/3 cup raisins, 1 Tbsp brown sugar and 1 Tbsp cinnamon making sure to spread them around evenly on the dough within 1-inch of the edge.

5. Carefully roll up the bread dough and then fold in the sides, making sure to pinch the seams together.

6. Spray an 8 X 4 loaf pan with non-stick spray and then place the Scratch Made Cinnamon Raisin Bread seam-side down.

7. Then cover the loaf pan with plastic wrap and rest for 20 minutes to allow the bread to rise.

8. Preheat the oven to 375 degrees Fahrenheit and then remove the plastic wrap off of the loaf pan.
9. Bake the Scratch Made Cinnamon Raisin Bread for 35 minutes.

Remove the bread from the oven and let it rest to cool completely before cutting and enjoy!
