Recipe

Ingredients

2 cups Flour
2 tsp sugar
1/2 tsp salt
2 1/2 tsp baking powder
6 Tbsp butter, cold, cubed
3/4 cup whole milk
Canola Oil for frying
Granulated sugar for coating

ingredients for Chinese Doughnuts

Directions

1. In a heavy bottomed pan, pour 2-inches of canola oil and then heat to 350 degrees Fahrenheit.
This Dutch oven type pan is literally perfect for this job as the pan can transfer heat amazingly well and the height of the sides help to reduce any splatter.

2. Measure and then add 2 cups flour to the bowl of a food processor with the chopping blade inserted.

3. Add 2 teaspoons granulated sugar to the flour in the food processor bowl.

4. Measure and then add 1/2 teaspoon salt to the food processor.

5. Measure and then add 2 1/2 teaspoons baking powder to the food processor and then cover with the lid.

6. Process the dry ingredients until just combined and then turn off the food processor.
Just a few pulses will do as you just need to mix the ingredients together.

7. Cut the cold butter into cubes and then add it to the bowl of the food processor.
Cover and then process until the butter mixes well and resembles coarse crumbles.
This can take anywhere between 1-2 minutes.

8. Measure and then add 3/4 cup milk through the funnel spout and process until the ingredients come together.
The ingredients will combine slowly and then all of a sudden you will then have a ball of dough sitting in the food processor. Success!

9. Turn out the dough onto a clean and floured surface, and then pat the dough using your fingers until the dough measures 1/2-inch thick.
A rolling pin is not necessary for this recipe because the point is to keep the dough light and fluffy. Using a rolling pin will cause the dough to become tough and flat.

10. Use a 2-inch biscuit cutter, or a cup, to cut the dough into circles, then place them on wax paper until ready to fry.

11. When the oil is heated to 350 degrees Fahrenheit, add the biscuits in small batches and fry for 2 minutes on each side.
Use a thermometer to measure the oil temperature.

12. Place a cooling rack in a rimmed baking sheet and then add paper towel sheets on top of the cooling rack, then set aside.
The paper towel helps to soak up any grease drips.
Additionally, a paper bag works equally well instead of paper towel.

13. Using a strainer or fry spatula, flip the doughnuts and continue to fry them all, when done, remove to the paper towel to let rest for 1 minute.

14. In a medium bowl, add granulated sugar and while the Chinese Doughnuts are still not, place 2-4 doughnuts and then coat all sides with the sugar.

Finally, serve and enjoy!
