S’mores Brownies Recipe – How to make them from scratch!

Making Brownies is the easiest dessert, but making S’mores Brownies is a treat for a special day.
Waking up, the temperature was 0 and the high was 6. No joke.
With the temperature so low, a pick-me-up dessert was desperately needed to bring the cold out of the air. What makes one feel warmer than a S’more and the thought of sitting around a campfire?

Recipe

Ingredients

2/3 cup oil
2/3 cup cocoa powder
1/2 cup flour
1/4 tsp baking powder
1/2 tsp salt
3 eggs
2/3 cup brown sugar
1 1/3 cup powdered sugar
1 tsp vanilla

Ingredients for S'mores Brownies

Directions

1. Firstly, preheat oven to 325 degrees.
2. Secondly, place a piece of parchment paper into a 9 X 9 square pan, then spray with non-stick spray and dust with flour.

3. Then set pan aside.
Start with a few tablespoons of flour and then add more as you need it.

The flour helps the brownies to not stick to the pan once cooked.

4. Place 2/3 cup oil into a microwavable measuring cup and then microwave for 1 minute.
Warming the oil will bloom the cocoa powder, helping the brownies to then not taste powdery, but a smooth and rich cocoa flavor.

5. When warm, whisk in 2/3 cup cocoa powder until completely combined, then set measuring cup aside for 4-5 minutes until cooled.

6. In a small bowl, measure and add 1/2 cup flour, 1/4 teaspoon baking powder and 1/2 teaspoon salt, and stir to combine, then set aside.
My favorite bowls are these that were given as a gift from my mom. They are a four-bowl set from Wolfgang Puck with lids for all of them. One bowl has opening in the lid for various shredders.

7. Place 3 eggs, 2/3 cup brown sugar and 1 1/3 cup powdered sugar in the bowl of a KitchenAid mixer.
Make sure to firstly crack the eggs into a separate bowl to make sure no shells get into the mixture.

8. Then beat on medium speed until fluffy, 2-3 minutes, the color will lighten a lot at this stage.

9. Add 1 teaspoon homemade vanilla and then mix on low until just combined.
For this recipe, trying to make it as homemade as possible, then using homemade vanilla extract was important.

10. Add 1/2 of the oil and cocoa mixture and start the mixer on low until just combined, then turn the speed to medium-high for 5 minutes.
Make sure to add the oil/cocoa SLOWLY to temper the egg mixture, then beat it on LOW until added before turning up the speed.

11. Add all of the dry ingredients from the small bowl and then mix on low until just combined.

12. Add the rest of the cocoa mixture and then mix on medium-high for 1 minute, scraping down the sides of the KitchenAid bowl as needed.

13. Empty brownie batter into the prepared pan, then using a spatula spread the mixture evenly through the pan.

14. Bake in the preheated oven for 24-30 minutes, making sure to not overbake the Brownies.

15. Once done, remove the S’mores brownies from the oven and top them immediately with chocolate and mini marshmallows.

Add chocolate chips, white chips if desired, and mini marshmallows over the top of the brownies while still hot.

16. Set the oven to BROIL and then place the S’mores brownies into the oven with the rack in the middle position until the marshmallows are browned.
Make sure to watch them while under the broiler so the marshmallows do not burn, this only takes 1-2 minutes.

Remove the S’mores Brownies from the oven and then let the pan cool for 10-15 minutes before cutting and serving!
