Ingredients for Chocolate Chip Zucchini Bread

3 1/2 cups Zucchini, shredded
3 eggs
1/2 cup apple sauce
4 tsp cinnamon
1 tsp salt
1/2 cup oil
3 cups flour
1 tsp baking powder
1 tsp baking soda
2 1/4 cup brown sugar
4 tsp Homemade Vanilla Extract

Directions for Chocolate Chip Zucchini Bread

1. Preheat the oven to 350 degrees Fahrenheit.

2. In a small bowl, sift together the 3 cups flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt, and 4 teaspoons cinnamon.

3. Peel the zucchini and then measure out 3 1/2 cups zucchini and set aside.
In the freezer, we had bags of zucchini that was preserved since last fall. A cousin gifted it to me and to keep it through the winter. It was washed, peeled, seeds removed, then bagged and frozen. This is a great way to keep squash through the winter.

4. In the bowl of a KitchenAid mixer, add 3 eggs, 1/2 cup oil, 1/2 cup apple sauce, 4 teaspoon Homemade Vanilla Extract and 2 1/4 cups brown sugar. Beat until just combined.

Add the Dry Ingredients

5. Mix in the dry ingredients 1 cup at a time, until all of the dry ingredients is mixed well into the batter.

6. Add the shredded zucchini into the bowl of the KitchenAid mixer and then mix on low until combined.

7. Measure out 1 cup of the chocolate chips and then add them to the batter and mix slightly to combine.

8. Spray two loaf pans with non-stick spray.

9. Pour the Chocolate Zucchini Bread batter into the two prepared loaf pans.

Bake the Chocolate Chip Zucchini Bread

10. Place the pans into the preheated oven and bake for 45-60 minutes.

11. Remove the pans from the oven and let the Chocolate Zucchini Bread loafs rest for 5 minutes.

12. Remove the loafs from the pans and rest to cool on a cooling rack.

Notes

Cook time can vary from 45-60 minutes depending on the oven.
Check the Chocolate Chip Zucchini bread at 45 minutes with a toothpick inserted into the center. When done, the batter will no longer stick, but can look like tiny crumbs clinging.
If still doughy, cook for an additional 5 minutes and recheck doneness.
