Sides, side dishes and recipes that accompany the main course. With meatloaf, this recipe for a Baked Sweet Potato pair well with many things. And as far as recipes go, this one was easy to make and fairly inexpensive.

Cost for this Recipe
While on vacation, we went to a local restaurant and I had a chicken dinner with a Baked Sweet Potato topped with Cinnamon Butter that was to-die-for. It was creamy, sweet and unbelievably delicious with the Sweet Potato. So, once we got home from vacation, I was desperate to replicate this recipe for the family.
Sweet Potatoes do not cost much. At our local ALDI, they are $0.90 each. For a side dish, this is really quite reasonable. However, the price can vary depending on where you shop and live.
At another local grocery store, their sweet potatoes cost $1.09, while another nation-wide store costs $0.96 and a bag for $5.88, or $1.96 per pound.
For this dinner specifically, it cost $4.50 for five Baked Sweet Potatoes.

Directions for Baked Sweet Potato
1. Firstly, wash the Sweet Potatoes in a sink colander to make sure they are clean.
This sink colander is great and keeps the food off the base of the sink.
Additionally, it is expandable to fit most sinks.

2. Place the washed and clean Sweet Potatoes on a cutting board.

3. Using a fork, stab the Sweet Potatoes so the skins are pierced. This helps them to cook thoroughly.

4. Place a 12-inch sheet of aluminum foil on the countertop.

5. Place a Sweet Potato on the aluminum foil, in the middle, and then fold over the long sides over the potato. Then, fold up the short ends to cover the seam.

6. Wrap all of the Sweet Potatoes in aluminum foil, making sure they are completely covered. This night we made five Baked Sweet Potatoes.

7. Place the foil-wrapped Sweet Potatoes in the oven, headed to 350 degrees Fahrenheit and bake them until they are soft and tender, around 1 hour. While the Sweet Potatoes were cooking in the oven, the main course was also cooking. I made a new recipe, Meatloaf with Herbdacious. Check it out by clicking the link below.

8. Unwrap each Sweet Potato and check for doneness with a knife inserted, then unwrap the rest and place on a plate to cool for 5 minutes.

Finally, serve the Baked Sweet Potatoes with Cinnamon Butter or any other topping you desire.
