Creamy Salmon Casserole with Bacon Recipe

Here is a recipe for a Creamy Casserole with Salmon and Bacon. With a cream sauce made from shallots, garlic and heavy cream, with pops of texture from Sun-Dried Tomatoes, this recipe is a win from start to finish.

As far as dinners go, my goal is to have a dinner cost around $20. Sometimes, with grilled cheese costing under $10, the average helps to soften the blow when a dinner soars over the $20. Even if by a small amount.

Budget used to be a word so scary and foreign to me. I used to buy whatever foods I wanted, whatever I desired at a store, with no consideration for price. That is until my husband and I hit a wall in 2014. We had a rough go-of-it financially and we needed a change. I’d say, we were around $20,000 in credit card debt, 2 car payments, a mortgage, and $12K in student loans.

As a stay-at-home mom, my degree was not being used, but we still had to pay for it.

Budgeting for food was the easiest thing we could do to start to get a handle on our budget, and we learned that from Financial Peace University. This program was a crash course in getting control over your budget, to lay the groundwork for gaining wealth in the future. I highly recommend taking this class, if you have not. What is the worst that could happen? I know from firsthand experience, you’d become debt free in under 36 months, while a majority of those who take the class do it in under 24 months.

Ingredients for Creamy Salmon Casserole with Bacon

1 Shallot
3 cups Rice
1-pound Bacon
1 Salmon Filet
2 Tbsp Garlic
1 cup Heavy Cream
8 Tbsp Butter
1/4 cup Flour
7-oz jar Sun-Dried Tomatoes
33-oz Coconut Water
8-oz Cream Cheese

Directions for Creamy Salmon Casserole with Bacon

1. Preheat the oven to 375 degrees Fahrenheit.
2. Rinse and then cook the 3 cups of rice.
Recently we gained a Rice Cooker, and it worked SO well at making rice I was completely shocked.
Rinse the rice, add it to the pot, fill with water and pop the button down. Wait the directed time and viola, cooked rice!

3. Line a rimmed baking sheet with aluminum foil and spray it with nonstick spray.

4. Place the Salmon Filet on the baking sheet.

5. Open the package of bacon and then lay the slices on the baking sheet.

6. Place the baking sheets with the salmon and bacon in the oven and cook for 45 minutes, or until the bacon is crispy and cooked.

7. Place a Dutch Oven on the stove, turn the temp to medium and then mince a Shallot on a cutting board.

8. To the warm Dutch Oven, add 8 Tbsp butter and minced shallots. Cook the shallots until translucent and soft.

9. When soft, add 1/4 cup flour to the melted butter and shallots and whisk well to combine, then cook the flour for 2 minutes.

10. To the flour mixture, add 1 cup coconut water and whisk well to combine to break up any clumps, then add the rest of the coconut water.

11. Add 8-oz Cream Cheese and 1 cup Heavy Cream to the sauce in the Dutch Oven and whisk to combine.

12. In a mesh strainer, drain the Sun-Dried Tomatoes, then on a cutting board, dice them and add to the sauce in the Dutch Oven.

13. Season the cream sauce with Salt and Pepper.

14. Remove the bacon from the oven and lay sheets of paper towel on a plate, then lay the bacon to drip on the paper towels to cool. When cool, cut the bacon to 1-inch chunks.

15. When the rice is fully cooked, add it to the sauce in the Dutch Oven and stir well to combine.

16. Break up the Salmon filet and add it to the Dutch Oven.

17. Add the bacon to the Dutch Oven on top of the Salmon pieces.

18. Shred 4-oz Asiago Cheese and add it to the top of the Dutch Oven.

19. Bake the Creamy Salmon Casserole in the oven for 20 minutes.

When done, remove the Dutch Oven from the oven and rest for 5 minutes before serving.
