Corn Dogs Muffins – A Fun Dinner for the Whole Family

This recipe for Corn Dog Muffins turned out to be a fun recipe to make. And to top it off, the kids absolutely LOVED eating them! Instead of buying frozen corn dogs, or mini frozen corn dogs, a mini muffin tin was used to make this deliciously fun dinner idea.

Cost to make this recipe

As far as recipes go, this one is really inexpensive. Corn bread is not expensive to make, and as the basis of this recipe, it helps to keep the cost low.

Below is a cost breakdown to make this recipe for Corn Dog Muffins.

This recipe made a total of 30 Corn Dog Muffins.
I did, however, double the recipe, so we had 60 for $11.

This is an extensive list of ingredients for one food and is one main reason for my desire to have a Scratch Kitchen.

Corn bread can be made into muffins, bread and baked and broken up into pieces to go along with stuffing. Corn bread stuffing is AMAZING by the way. My mother-in-law makes the BEST when we go for visits. She shreds chicken and adds it to traditional stuffing. I have tried to replicate it, but hers is just hands down the best.

Recipe for Corn Dog Muffins

Ingredients for Corn Dog Muffins

1 cup Enriched Yellow Corn Meal
1 cup all-purpose Flour
4 tsp Baking Powder
1/2 tsp Salt
2-4 Tbsp Sugar
1 egg
1 cup Milk
1/4 cup Vegetable Oil

Directions for Corn Dog Muffins

1. Preheat oven to 425 degrees.

2. In the bowl of your KitchenAid mixer, or a large bowl, pour 1 cup corn meal.

3. Then add 1 cup flour to the KitchenAid bowl.

4. Measure out 2-4 Tablespoons sugar and then add it to the bowl.

5. Add 1/2 teaspoon salt to the bowl.

6. Then add 4 teaspoons baking powder to the bowl and turn your mixer on low to combine all ingredients.

7. Measure and pour 1 cup milk into the dry ingredients and then mix to combine.

8. Add the egg and then mix to combine.

9. Measure and then add oil to the KitchenAid mixer bowl, mix to combine.

10. On a cutting board, cut the hot dogs in 3-4 pieces, small enough to fit into the mini muffin tins.

When shopping for food, finding foods without artificial dyes and fillers helps to maintain a healthy diet. Artificial dyes are really not good for you, neither are fillers. Yuck.
ALDI products are without artificial dyes and flavors.

11. Spray the mini muffin tin with nonstick spray.

12. Use a spoon or small ice cream scoop to add corn bread mixture into each muffin tin, on top of each hot dog.

13. Place one piece of hot dog into each muffin tin hole.

14. Place the mini muffin tins into the preheated oven and then bake the Corn Dog Muffins until just browned, around 10-12 minutes.

15. Remove the muffin tin from the oven and let the Corn Dog Muffins cool for 2 minutes in the tin, then remove the muffins and cool on a rack before serving.

Enjoy the Corn Dog Muffins with ketchup and your favorite sides.
